At Brazcanco / Brazilian Canadian Coffee Co. Ltd., our blends have always used a large selection of Estate Coffees which we pay a premium for. This not only ensures premium consistent product for our customers, but also supports the farmers so they can take care of their workers and crops. An important aspect of our purchasing practices is to know exactly which plantations our coffee is shipped from. Unlike most roasters we refrain from purchasing from coop mills where coffee from different sources (good and bad) is blended into a homogeneous mixture that ends up as a mild , neutral cup lacking any unique flavours. We aim to source some of the most flavourful coffees from each region we purchase from, and this is only possible by evaluating non blended coffees at the farm level. Regular visits to our suppliers reinforce our quality requirements and help develop mutually rewarding relationships. Some of our suppliers we have been dealing with for more than fifteen years.
|Pre-Shipment Testing / Evaluation|
|Before any shipments leave source , they are required to send us a Preshipment sample of each container purchased. This sample is evaluated at our facility for moisture level, defect count and screen size. If these parameters are within spec then it is roasted on a sample roaster and cupped using a standardized steeping method. The sensory evaluation is the final test . The coffee must meet strict flavour criteria which have been established for each particular type. If the sample passes these stringent requirements the coffee is now ready for shipment. The coffee is sent to an independent warehouse close to the roasting facility. Here it is off loaded and independent samples are now drawn from different areas of the batch and sent to Brazcanco. These samples are evaluated using the same criteria outlined above. The key here is to confirm that this sample result is consistent with the first preshipment sample to ensure there is consistency as well as quality.
Once in process , samples are tested daily on a predeteremined schedule . Physical and sensory evaluations are performed at all the major stages of production listed below.
|When the beans arrive at our facility they are stored in a controlled environment until they are ready for use. All the bags are weighed, recorded and checked thoroughly before being stacked in our warehouse. Each container load is assigned a unique tracking number so that it can be tracked through the process for quality control and traceability purposes.|
|Cleaning / Silo Storage|
|The beans then go through a number of cleaning stations to ensure that they are clean and free of foreign material. Our high speed silo systems store the beans until they are ready for manufacturing. The transfer systems are fully enclosed to prevent contamination and preserve product integrity.|
|From there it is on to our automated blending and weighing system which accurately forms the blends within strict tolerances.|
|Once blended they are transferred to our roasters where highly trained experts mesh the art of roasting with modern control technologies to consistently develop the full flavour potentialities of each coffee while doing it consistently. Our roasting equipment employs the time tested batch roasting principles which are not efficient in terms of time relative to output but excell in bringing out the full flavour potential of the coffees. This is mated with modern control technologies to ensure consistent flavour profiles batch to batch. While purchasing the best quality raw material is of great importance , the way the product is roasted is equally as important to bring out the uniqueness of each type of coffee.|
|Once roasted, the beans are transferred to the grinding department where automated systems take the roasted beans and grind them to various consistencies, within strict tolerances.|
|Using state of the art packaging machines the coffee is packed in the appropriate formats. All our packaging is nitrogen flushed to ensure that the product is fresh when our customer decides to use it. Strict attention is paid to package seals to maintain the integrity of the coffee. It is this high end consistent product which has allowed our business to grow by word of mouth.|
|Once the coffee has been packaged, it is transferred to our storage warehouse, until it is ready for shipment or use.|
